Mozaic Brings Indonesian Flavours to Les Grandes Tables du Monde’s “Momentum” in France
Ubud, Bali — Mozaic Restaurant Gastronomic has returned from the international stage following its participation in Momentum, a global culinary gathering by Les Grandes Tables du Monde, held in France on April 13, 2026.
As the only Indonesian restaurant invited to take part, Mozaic represented the country’s culinary identity through a contemporary lens, joining a lineup of some of the world’s most respected chefs and restaurants.
For the event, Mozaic’s Head Chef, Blake Thornley, collaborated with Flocons de Sel, the three-Michelin-starred restaurant led by Emmanuel Renaut. The collaboration took place in the heart of the French Alps, bringing together distinct culinary perspectives in a shared kitchen.
Chef Blake presented a menu rooted in Indonesian ingredients, which he personally brought to France for the occasion. These included base gede, kaffir lime, bumbu rendang, ginger flower, and kluwek nut — elements that carry depth, complexity, and cultural significance. Through precise technique and modern interpretation, these ingredients were introduced to an international audience in a refined and unexpected way.
The response to the event was immediate, with the experience fully booked within three days of release. The level of enthusiasm exceeded expectations, highlighting a strong global interest in Indonesian flavours and Mozaic’s evolving culinary narrative.
“Being able to cook with Indonesian ingredients on a stage like this is something special,” said Chef Blake Thornley. “It’s about sharing where we come from, while pushing it forward.”
Following the event, Chef Blake has now returned to Bali, bringing back both insight and inspiration from the collaboration.
Looking ahead, Mozaic plans to continue this exchange by inviting Chef Emmanuel Renaut to Bali for a future collaboration in Ubud, extending the dialogue that began in France to Mozaic’s home ground.
